Taco John’s on track to open mid-March

After more than a decade, Galesburg is months away from the return of Taco John’s.
Franchise owner Bill Corrick says he expects the restaurant to open mid-March, if all goes according to plan.

Corrick owns Taco John’s locations in Clinton, Fairfield and Burlington, Iowa and has been with the company for 25 years. He tells WGIL the Galesburg community has been ecstatic about the restaurant’s oft-rumored resurgence.

“Taco John’s was there 15 years ago and people still remember the good things that we have.”

Corrick says the location will have old favorites, like Potato Olés, but also several newcomers, including a breakfast menu.
Construction is underway now on the building that was formerly Spudo’s Donuts on Henderson Street.

“We just started tearing out the inside now. We’re completely gutting everything–walls, floors, all the equipment is gone. We’re just starting brand new, like it’s a brand new stick building again.”

Corrick says the parking lot was finished late last year before the weather turned cold.

He expects the restaurant to employ between 40 and 50 people once the doors open.

Taco John’s has been in operation since the first location opened in Cheyenne, Wyoming in 1969. since then, the company has franchised more than 415 restaurants in 27 states, according to the Taco John’s website.
