Hidden Hills cutting the vine on their winery opening next week

Hidden Hills Winery is gearing up to at last open to the public in about a week.Co-owner David Poland says from the time they started the vineyard to the opening of the winery was a several-year process.

Grape growing and making wine started off as a hobby for Poland before he joined the Illinois Grape Growers and Vintners Association almost a decade ago and his interest kept growing from there.

While he enjoys it, grape growing is not an easy process and runs year round, with the winter months marked for pruning.

“I guess your easy time of year would be right around November-December time when things are kind of settled back and we start planning for the next year,” Poland says.

Poland says the benefit of Hidden Hills’ location is that its so close to Knoxville, just east of Love’s Travel Stop, that hooking up to the city’s water and building an access road weren’t overly challenging.

Poland notes the City of Knoxville has been very accommodating.

While local officials will have a “vine” cutting ceremony for the business next Thursday, the public is invited to their grand opening Saturday, Jan. 19 at 1 p.m.

Hors-d’oeuvres, music will be a part of the day and of course wine.
