“Chicken Lips” soon to be kissing Monmouth Country Club

There’s “Chick’s on the Square” in Macomb and “Chick’s on the River” in Quincy.
Now soon there will be “Chick’s at the Club” in Monmouth.

Nick Peterson, one of three co-owners of the popular bar and grills says that they will soon expand with a new location at the Monmouth Country Club.

Peterson is friends with a member of the country club board who gave him a call when they were ending their relationship with the club’s caterer. 

He says fans of the eats and drinks in Macomb can expect that full menu to come to Monmouth.

Perhaps what Chick’s is best known for is a unique take on a chicken strip called “chicken lips”.

Peterson tells WGIL what exactly a “chicken lip” is anyway.

“It’s a boneless, skinless chicken breast. We cut it in to four ounces strips and hand bread everything in the store and it’s basically a buffalo chicken tender and it’s rolled in one our sauces that we’ve come up with. We’ve got four or five sauces now,” Peterson says.

He adds that they have a few newer barbecue sauce options but the original “lip” sauce still is the most popular.

They’re shooting for a Mar. 1 opening date, with the kitchen needing some renovations in light of the country club never having had a full blown restaurant before.
