Uncle Billy’s Bakery gets new owners

Uncle Billy’s Bakery has new owners as its sister business, Cornucopia plans to soon move up the block.
Rachel and Ron Brown have been in Galesburg for about a year after moving from Ohio and have been looking to open a restaurant for the past seven years that they’ve been together.

Rachel has known Billy’s former owners Maury and Susan Lyon for a long time, having worked at Uncle Billy’s in high school. 

Ron was a chef in various places in Ohio and at one point he and Rachel both worked in a restaurant that specialized in being gluten-free, vegan and vegetarian.

“When I moved back home about a year ago they were thinking about changing some things and I wasn’t liking my current job so they asked if I would like to buy the place,” Rachel says. “And knowing that my husband is a chef and I’ve had experience with a bakery/business in the past we decided to buy it.”

Meanwhile, Cornucopia will open at 180 S. Seminary sometime next year as extensive renovations have been done and continue.

Rachel says that the transition makes things a little hectic but everyone is working as a team and they’re “figuring things out as they go.”

Cornucopia will stay under the Lyon’s ownership.

Rachel says you can expect beloved bakery recipes to stay they same but they would like to start serving breakfast and lunch next year.
