Local Meat Processor inducted into the Cured Meats Hall of Fame

Being inducted into the National Cured Meats Hall of Fame means much more than just being a cut above the rest. Doug Hankes of Thrushwood Farms in Galesburg is a 2017 inductee and he knows what all goes into being considered, after all, his dad Jim Hankes was inducted in 2009. To even be considered for the hall of fame, nominees have to: actively participated in American Cured Meat Championships, competed in state cured meat shows, and are willing to share their knowledge and information with others in the industry. Hankes tells WGIL that the American Cured Meat Championships is the most challenging competition in the industry, but it’s also the education side that he enjoys the most. Chris Young, Director of the American Cured Meat Championships says in a statement: “Doug’s knowledge and business success are the epitome of qualities we look for in candidates.” Hankes is one of the youngest to inducted. Family-owned and operated since 1978, the new generation has officially arrived at Thrushwood with Doug’s brother, Jeff joining the business. Looking forward, Doug says he’s excited for some of the new products and changes coming to Thrushwood Farms, and is ready to keep the tradition of quality products moving forward.
