Acapulco Restaurant moving to downtown Galesburg

With yesterday’s purchase of the former Carriage House furniture store on East Simmons Street, Acapulco Restaurant has begun the move to Galesburg’s downtown from it’s current home attached to Northgate Lanes.

Elvith Santoyo, owner of the Mexican restaurant, tells WGIL she likes the current spot, but wants the increased visibility of Simmons Street.

“The movement downtown is increasing and I believe that Acapulco Restaurant could help increase that movement,” Santoyo says. “And plus, you have a few Mexican restaurants on Henderson Street, you have El Ranchirito and then you have Jalisco’s on the other side of town, but we don’t have a Mexican restaurant in the heart of Galesburg, which is downtown.”

In naming restaurants, she also complimented the South Academy Street location El Jarochito.

Mayor John Pritchard was the owner of the old Carriage House building, which sits between Hawk’s Tattoos and the Corner Connection. Pritchard says he sold the roughly 14,000-square-foot space for around $90,000.

Santoyo says the building has room for two additional tenants.

“What we hope to encourage is maybe two new businesses or current businesses that are looking for a current location,” she Santoyo says.

She says work on the building’s internals will begin in three to four weeks and construction will take six to seven months, depending on weather. A full move can be expected at the end of the year or early next year.
