Taco John’s returns to Galesburg, Boss Food Truck opens tomorrow

Taco John’s made its triumphant return to Galesburg today. 

Franchise owner Bill Corrick was outside the Henderson Street location directing lunchtime traffic. He told WGIL business was more than booming.

“People are so happy, they don’t mind waiting 35-40 minutes,” he said.

The drive-through line was more than a dozen cars back, snaking into the Jo-Ann Fabric parking lot. Inside, seating was scarce.

Corrick said this could be the biggest opening in Taco John’s history.

“All of Taco John’s, 400 stores nationwide, this could be the record setter,” he said.

Corric was unable to comment on what the record actually is.

While waving traffic on, the ecstatic franchise owner said he thinks the opening sets a strong precedent for businesses in town.

“It means that investing in Galesburg should be a very good financial success,” Corrick said. “That’s what it means to me.”

The Taco John’s building was most recently occupied by Spudo’s.

Meanwhile, another business will be holding its grand opening tomorrow morning just a few blocks away.

According to their social media accounts, Boss Food Truck will be serving pulled pork nachos, breaded tenderloins, hand-cut fries and fresh salads starting at 11 a.m. tomorrow outside H&R Block.

In a Feb. 9 interview with WGIL, Boss Food Truck partner Jordan McDonald said the business would be operational from 11 to 2 p.m. Tuesdays though Fridays with later hours on weekends.
